Crust Peach Cobbler

Crust Peach Cobbler

Ingredients

For the Peach Filling:

  • 4 cups fresh or canned peaches (peeled and sliced)
  • ¾ cup granulated sugar
  • 1 tsp vanilla extract
  • 1 tsp cinnamon (optional)
  • 1 tbsp lemon juice (for freshness)
  • 2 tbsp cornstarch (to thicken the filling)

For the Crust:

  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1 tsp baking powder
  • ½ tsp salt
  • 1 cup whole milk
  • ½ cup unsalted butter (melted)

Instructions

1. Prepare the Peaches:

  1. Preheat your oven to 375°F (190°C).
  2. In a saucepan over medium heat, combine the sliced peaches, sugar, vanilla, cinnamon, and lemon juice.
  3. Stir in the cornstarch and cook for 3-5 minutes until the mixture thickens slightly.
  4. Remove from heat and set aside.

2. Make the Crust Batter:

  1. In a mixing bowl, whisk together the flour, sugar, baking powder, and salt.
  2. Add the milk and melted butter, stirring until smooth. The batter will be thin.

3. Assemble the Cobbler:

  1. Pour the batter evenly into a greased 9x13-inch baking dish.
  2. Spoon the peach mixture gently over the batter—do not stir (the batter will rise over the peaches during baking).
  3. Optional: Sprinkle a little cinnamon and sugar on top for extra flavor.

4. Bake the Cobbler:

  1. Place the dish in the preheated oven and bake for 40-45 minutes, or until the crust is golden brown and crispy.
  2. Let it cool slightly before serving.

Serving Suggestions:

  • Serve warm with a scoop of vanilla ice cream or whipped cream.
  • Sprinkle with powdered sugar for extra sweetness.

Tips for the Best Peach Cobbler:

  • Use ripe peaches: Fresh, ripe peaches give the best flavor, but canned or frozen peaches work too.
  • Don't stir the batter and peaches: This ensures the crust forms on top properly.
  • Add a hint of nutmeg: For a warm, spiced flavor.
