Crust Peach Cobbler
Ingredients
For the Peach Filling:
- 4 cups fresh or canned peaches (peeled and sliced)
- ¾ cup granulated sugar
- 1 tsp vanilla extract
- 1 tsp cinnamon (optional)
- 1 tbsp lemon juice (for freshness)
- 2 tbsp cornstarch (to thicken the filling)
For the Crust:
- 1 cup all-purpose flour
- 1 cup granulated sugar
- 1 tsp baking powder
- ½ tsp salt
- 1 cup whole milk
- ½ cup unsalted butter (melted)
Instructions
1. Prepare the Peaches:
- Preheat your oven to 375°F (190°C).
- In a saucepan over medium heat, combine the sliced peaches, sugar, vanilla, cinnamon, and lemon juice.
- Stir in the cornstarch and cook for 3-5 minutes until the mixture thickens slightly.
- Remove from heat and set aside.
2. Make the Crust Batter:
- In a mixing bowl, whisk together the flour, sugar, baking powder, and salt.
- Add the milk and melted butter, stirring until smooth. The batter will be thin.
3. Assemble the Cobbler:
- Pour the batter evenly into a greased 9x13-inch baking dish.
- Spoon the peach mixture gently over the batter—do not stir (the batter will rise over the peaches during baking).
- Optional: Sprinkle a little cinnamon and sugar on top for extra flavor.
4. Bake the Cobbler:
- Place the dish in the preheated oven and bake for 40-45 minutes, or until the crust is golden brown and crispy.
- Let it cool slightly before serving.
Serving Suggestions:
- Serve warm with a scoop of vanilla ice cream or whipped cream.
- Sprinkle with powdered sugar for extra sweetness.
Tips for the Best Peach Cobbler:
- Use ripe peaches: Fresh, ripe peaches give the best flavor, but canned or frozen peaches work too.
- Don't stir the batter and peaches: This ensures the crust forms on top properly.
- Add a hint of nutmeg: For a warm, spiced flavor.
